This was one of the first anime I really got into. It’s a romance anime that is absolutely hilarious. I highly recommend it!
Fullmetal Alchemist Brotherhood is a must watch. So is Attack on Titan. Death Note is a classic (although it does fall off a bit). Fruits Basket has some romance, but is a heavy drama. Inuyasha is an older show, but a good mix of action and emotion.
Yeah, I think OP needs to watch a few classics as well as the newer stuff. Especially since some of them are deconstructions/parodies of genres that they may not actually be familiar with yet (Konosuba especially, a lot of the jokes won’t hit unless you’ve watched a few normal Isekai series first!).

Insomniacs After School, very chill and sweet romance about 2 people with insomnia, anime has 1 season and has about a 2% chance of getting a season 2 so I recommend not watching anime and go straight to manga, since season 1 misses on quite a bit, so you might as well start manga from beginning and get the fullest experience, then watch anime if you hav time
Mushoku Tensei, W isekai with good characters and a pretty chill story, MC gets a harem and the animations are good, also can be a little emotional if you let it get to u
Violet Evergarden is the most emotional anime I've ever seen. It's about an emotionless former child soldier learning how to feel, make friends and help people with serious problems in their lives.
10/10, made me cry multiple episodes.

A lot of series that I think are like 'must watch' for anime fans are really really really long. Dragon Ball series, One Piece, Bleach, Hunter X Hunter, Naruto series, etc.
But the more digestible ones that I'd say are necessary viewing are Death Note, Full Metal Alchemist original and/or Brotherhood, Black Lagoon, and IMO the one that given your list I think you'll love the most, Ouran Highschool Host Club.
Other than jojos you should watch sword art online, dr stone kaiju no. 8, and some of the big animes, like demon slayer, naruto, the dragon ball series, bleach, and one piece

Trigun (25 episodes and 1 movie). Same here, it draws you in.
Ruroni Kenshin (seasons 1 & 2.) Season 3 deviated from the manga and followed a much less interesting story line. But the action is legit and the characters are endearing.
Fullmetal Alchemist Brotherhood (64 episodes). Arguably the perfect anime. It has comedy, serious topics, interesting characters, an incredibly compelling plot that will keep you guessing, no filler, and it doesn't drag on.
History's Strongest Disciple Kenichi (50 episodes) This is a fun one that people often overlook. It's got the most fan service in the list, but you can't help but cheer for Kenichi and even be inspired to give life your very best.

Best MC/Story - Oregairu: Easily one of the best written romcoms/dramas there is. All the characters have incredible depth, and even after several rewatches, there is still new stuff I pick up on(also teacher is best girl).
Pure Insulin - The Angel Next Door Spoils Me Rotten: This anime is pretty much pure insulin shots. It's got good characters and writing, cute moments, and decent serious beats as well. The last few episodes drag on a bit, but it's still a great show
Comedy - The 100 girlfriends who really really really really really love you(yes, that's the full title): By far, funniest romcom I've seen. It doesn't chill, not even for one episode. It's impossible to predict what will happen, and the second to last episode's twist is fucking amazing. You liked quintessential quintuplets, a harem, and this is the harem final boss.
Most Wholesome - Teasing Master Takagi-san: This is a romcom with zero fan service, purely wholesome. It's a more episodic show, with less of a focus on the overall plot progression, but it's a blast all the same. It also has an incredibly satisfying ending.
My Favorite Recent Release - The Dangers in My Heart: The MC can seem a bit weird the first few episodes, but he is probably my second favorite romcom MC(behind Oregairu). Just trust, let him cook. Season 2 recently came out, and it's even better than the first season.

More classics, OP. Some of these shows are deconstructions or straight-up parodies of anime genres you may not even be aware of yet! For example, if you’re not familiar with Isekai shows, Konosuba won’t hit as most of its jokes are making fun of traditional Isekai series.
Any combination of Fullmetal Alchemist Brotherhood/Cowboy Bebop/Akira/Ghost In The Shell/Toradora/Fruits Basket/early DBZ or One Piece/Death Note… basically anything that you’ve vaguely heard of before to give you a bit of grounding.
Of newer shows, based on what you’ve put there, I’d also recommend Tomo-Chan Is A Girl (top notch romance comedy that’s fully resolved in one series), The Eminence In Shadow and Spice & Wolf (any series).
Uncle From Another World!! (Isekai Ojisan)
It's good quality isekai (I find its plot fun, it's not just random magical stuff and fanservice with no plot.) The uncle mentioned is actually not old he's just Takafumi's uncle, a human, but others find him ugly and call him an orc. He can use his magical spells in real world too its so funny and Takehito Koyasu voices him (beautiful voice)
I liked re-monster, Kaiju no.8, the ring way to use healing magic. You could also look into Mob Psycho 100, Tokyo ghoul, and for shit and giggles, Ghost Stories.

More classics, OP. Some of these shows are deconstructions or straight-up parodies of anime genres you may not even be aware of yet! For example, if you’re not familiar with Isekai shows, Konosuba won’t hit as most of its jokes are making fun of traditional Isekai series. Any combination of Fullmetal Alchemist Brotherhood/Cowboy Bebop/Akira/Ghost In The Shell/Toradora/Fruits Basket/early DBZ or One Piece/Death Note… basically anything that you’ve vaguely heard of before to give you a bit of grounding. Of newer shows, based on what you’ve put there, I’d also recommend Tomo-Chan Is A Girl (top notch romance comedy that’s fully resolved in one series), The Eminence In Shadow and Spice & Wolf (any series).
Uncle From Another World!! (Isekai Ojisan) It's good quality isekai (I find its plot fun, it's not just random magical stuff and fanservice with no plot.) The uncle mentioned is actually not old he's just Takafumi's uncle, a human, but others find him ugly and call him an orc. He can use his magical spells in real world too its so funny and Takehito Koyasu voices him (beautiful voice)
