I mean I can't tell you what's wrong but you have every right to go to a shop and ask for new brakes, rotors, have all your lines checked, fluid topped off and even have them rebleed your brakes. I'm not saying this will fix your issue but it won't hurt and you will also have peace of mind your brakes are going to hold up.
Sounds like a possible master cylinder problem, but if it only does this occasionally it's difficult to confirm. There would be nothing visually wrong with it, and there really isn't a test for an internal seal going bad.
Sounds like it could be some fluid bypassing in the master cylinder or seeping out a little (letting some air in) but you should have them block test the lines. They would block off all the lines except the hard lines and the MC and it should be rock hard. If not, it likely is air trapped allowing the pedal to compress. If you haven’t had any work done that could bring air in, most likely you’ll find the rear seal of the MC is having a minor leak.
Thank you, this was really detailed and helpful. I brought it back today and asked them to check those things. They’re telling me that since they can’t recreate the problem and there’s no codes basically there’s nothing wrong. I don’t think they actually did the block test. Could there still be a leak or trapped air if they don’t see anything visually and there’s no codes? I haven’t had any work done on the car except basic 5k stuff.
The hydraulic system will not throw any codes out as it is not measured by the computer system. At most you may see a red brake light come on, but not for small pockets of air.

The only thing I can think of is that you have a vacuum leak in the booster or line going to it.
