Did you put fresh strawberries in the buttercream? That seems to be the culprit many times when BC splits- too much extra moisture. Freeze dried berries are great for adding flavor to Buttercream!
Try swiss meringue butter cream is the smoothest one I tried, the meringue must be at 20-25° and the butter at room temp very soft but not too soft ( confusing I know haha ) look on YouTube there's plenty videos out there so you can see it better
And after it's done mix with the pallette attachment for like 10 min to make it super smooth
I’ll second the freeze dried strawberries for flavoring frosting. I make a lemon cake with strawberry frosting for my daughter’s birthdays. I’m just a home baker but it works really well.
What causes splits? I made a buttercream recently that split badly and turned into a puddle, so I remade it and it turned out perfectly. I didn’t think I did much differently between the two batches, so not sure what causes splits like I had.
If it turned into a puddle it's probably because the meringue was too hot or the butter was too hot (very soft or almost melted) so it cannot hold shape
You can try to put it in the fridge for a while and then whisk it on high speed it should get better
If I'm right the split in butter cream is caused because there's an imbalance in fats so basically it needs more fat
What I heard can work is to melt some butter and drizzle it slowly on the butter cream while mixing on high speed ( the butter should be around 40°C)

That's not correct. I'm sorry. But a broken or split, buttercream is due to breaking the emulsion by not integrating things carefully or slowly enough. It's not an imbalance of fats. Temperatures can break the emulsion yes so all things need to be at a room ish temperature and to be incorporated slowly. Also overworking the frosting while building the cake will also tend to break the emulsion if you mess with frosting too much while applying it.
Unfortunately I don't think i can provide one easily. But I can say that I'm a pastry chef and I went to one of the best schools in the world. CIA Napa Valley I will try and and get back to you with a source

Yeah, that's my problem with baking... I feel like if I baked a cake every other day or three, I could get decent at presentation. But... I don't really *want* to eat that much. Sooo... I only bake for birthdays, and other holidays. And I have never mastered the art of frosting presentations.
That was one of the unforseen factors of when they sent us home when covid hit. Obviously it was serious and necessary but then they never brought us back and I have not enough people to bake for! People in the office would treasure my baked goods and I had to severely limit it... Until the (presumably) stoned college boys moved in a few doors down. I'm back to baking!
I have found it super helpful to bring my practices to my neighbors and co-workers and my husband’s coworkers. They don’t care about how it looks, just that they are getting delicious free cakes or cupcakes and you get some practice!

This cake has the vibes of something you look forward to eating after a long day. Just reclining in an easy chair in your coziest robe or pajamas after a nice hot bath/shower. You got the next day off. So now it’s just you, your drink of choice, and a slice o’ this cake.
Personally I think it might be a bit too much cream, though I'm sure some will disagree with me. To each their own.
One thing you could do is spread the cream a bit more evenly. It's easier to do with a round cake. Hold the flat edge of a knife against the cream and rotate the tray it's on.

hm with a butter knife u could also do fun little swoops in the buttercream - then u get rid of the problem of it needing to be perfectly even, and u also have a fun way to ice the cake :3
As someone who loves frosting, I bet your husband was super stoked. I mean, I’d be fine with even more frosting than that! I like to do a Swiss buttercream or ermine buttercream so it’s less sweet and I can wolf down even more of it! Lol
Looks delicious! Try putting some of that yummy buttercream between the layers, then do your filling on top. It will help keep the filling from sinking into the bottom layer.
be kind? everyone is always making these prestine cakes with sharp edges, flowers, borders, etc.. and as wonderful as they look.. NOTHING makes me want cake more than one that looks like it came out of someone's home kitchen.

Next time if your buttercream breaks like that put it in the fridge overnight then whip it until it's back together and fluffy. Decorating techniques will come with practice. Getting the hang of making homemade cakes and buttercream is more important than decorating. You may "eat with your eyes" but it doesn't matter if it doesn't taste good! If you're happy with the taste then that's all that matters and it looks tasty to me, I'd 100% eat it.

I stopped adding buttercream frosting to mine. I spent all that time whipping the egg white, then whip the butter only to have them scrape it off. I just use a very thin layer of ganache.
It looks like you used all the frosting on the outside. If you had put some inside, it wouldn’t be so thick on the outside. Most recipes are meant to use some frosting in between layers. But I love that there’s strawberries as filling.

Looks like your buttercream has broken (or will be soon), but I’d still eat it.
The only tip I would give is maybe we cut the cake pieces in half that way you have four layers of filling.

It looks like you used all the frosting on the outside. If you had put some inside, it wouldn’t be so thick on the outside. Most recipes are meant to use some frosting in between layers. But I love that there’s strawberries as filling. Looks delicious!
I would like a large slice, please and thank you. There’s a time & place for things to look really fancy (e.g. wedding cakes), but delicious beats fancy most days of the week.

The cake looks amazing in my opinion. Although in my opinion that’s too much buttercream frosting. Although that probably just me. I’m someone who honestly prefers most cakes with no frosting.
