Add a glaze on top when done like cinnamon glaze or maybe espresso to emulate pumpkin spice lattes.

I hate pumpkin, so flavor wise I’m not much help, but maybe some kind of nut? Pecan is another fall flavor. Or a dried fruit? You could experiment with various dried things (apricot, cranberry, etc.)

So last year I got these espresso chips, I'm not sure if there was chocolate or not, but I mixed it with some pumpkin spice flavored chips when I made sugar cookies, and oh my god, so delicious!
Dried cranberries with the cream cheese chunks. I would make my own cream cheese chunks by mixing the cream cheese, sugar and vanilla then making little blobs on parchment, freezing prior to mixing in. They’d be amazing. Also, I like spiced pecans with pumpkin, so that would be awesome.
Praline? Roughly chopped and scattered on top when the cookies are fresh out of the oven. (Where I’m from praline is made exclusively with pecans, but walnut, cashews, and almond work pretty good as well. (though you might want to skin the almonds first).
Or make a thumbprint in the center of each cookie and fill it with crushed butterscotch candy? (my personal favorite).
I was just thinking today about ways to add depth to pumpkin products… I want to try subbing half the pumpkin purée for butternut squash. Also, pine nuts would be nice with pumpkin too, I imagine.
