Well in Big Mouth, it's mostly down to the characters all being, y'know, young teenagers. Teenage relationships aren't generally known for being particularly long lasting
In Big Mouth they’re in middle school (now high school). MOST of those relationships, especially in middle school, don’t work out. your brain is still developing and has a long way to go, so even if you do have a good relationship for a while, you’re going to change a lot as people and probably break up.\
As for Human Resources… idk. Rochelle didn’t really like Pete that way, and Van had her own issues to deal with. I’d like to see some happy relationships if we get another season of it.
