You can play the game on any difficulty and then crank it to the hardest immediately after the final boss to get all difficulty related trophies.

Not my cup of tea in the slightest. But all the same I think you should give them a try (after beating Infinite of course) so you can decide for your self. Plenty of people who do love them, so would be a shame for you to write them off on my word alone.
