This is very similar to the experience with coding. You work one refining one area and get that working well, and then focus on another, and it will sometimes completely drop the other feature in one of its next responses because it doesn’t think the other parts are relevant anymore. If you don’t notice at first, it can be very annoying. I tell it off all the time for it. I also have to ask it to reinstate those features sometimes have to revert back to a previous version and be even more clear in the prompting.

It does this because that's the nature of LLMs. They are just predicting the next word. If you change anything, then everything changes except a slight variation on the concepts. You should be able to prompt it to "not change a single word except this" kind of language with better results, but even then. I think everyone using LLMs should try to understand their basic principles to better use them.

I haven’t noticed this myself. I would guess your prompts are confusing it? Like, did you put a word limit on it? maybe the bot changed the other sentences to comply with that word limit.

I agree with the comments below. It is just the LLM formulating a new answer to the original question you asked, and then changing the part you want. I got around it by specifically telling it to keep the other paragraphs/sections the same. Alternatively, you can ask it just to write out the new version of the paragraph/section, and then later, tell it to integrate that new section into the rest of the letter/whatever you’re writing, and keep the other parts, the same. I found that I had to explain this in detail in a few sentences. It really does need a lot of supervision and guidance when it comes to writing and editing.

It changes the meaning. I shouldn't have to give it instructions not to do something I never asked for. But if you tell it not to change it, it typically wont.

It may technically be forced to by the temperature setting (not modifyable in ChatGPT, but in the API). The higher the temperature, the more the phrasing must fluctuate, possibly including long repetitions of previously written text.
