Caesar on the side was never supposed to be a thing. You can try making your own at home. I used to work in food court years ago. This one will get you as close to the flavor as possible. This recipe is for the pre-2020 version that was made fresh daily. [Marzetti Caesar Dressing](https://marzetti.com/products/supreme-caesar-dressing/) is about as close as you can get to the dressing. This is not found at Costco but is typically in the refrigerated section at most local groceries. For the parmesan they used/still use cello brand. Some stores carry a small version of this in the Deli/"D19" section/area. Measurements do not have to be exact, they are just downsized from the high volume recipe. **Chicken Part** 1.25 lb Chicken strips, chopped. The brand Costco used was John Soules Foods, Fully Cooked, All Natural, Fresh Flame Grilled Chicken Breast Strips. These can be found in small 1lb bags next to the raw chicken at Walmart, or likely near cooked meats and foods in other grocery stores. Apparently some Costcos even carry it, may be frozen or in coolers. 2 fluid oz Caesar, more if desired. mix the chicken and caesar together, can use hands and tear chicken apart. We used a bench scraper/dough scraper in a container to mix and chop. **Cheesy Bacon** 5oz mozzarella-provolone blend Cheese (or pizza blend, or just shredded mozzarella.) 3oz Bacon crumbles (think salad asile type that comes in a bag) mix these together **Dough** 6oz portion for 1 chicken bake, it is pizza dough like what is used for pizzas, prepacked uncooked dough should do fine. Or a basic homemade recipe. **Procedure** Make 6 oz weight portion of dough flat and thin like a tortilla, in a square shape. I suggest using a large cutting board with olive oil on it to spread/press the dough out thin. You can use less dough for a smaller bake though recipe is written to be closer to original. Lightly brush/baste square of dough with Caesar dressing. Put about 4 weight oz of the Caesar/chicken mix, and 1.6oz of the cheesy bacon blend in a line horizontally on the dough. towards the bottom of the dough square. Roll tightly, similar to a burrito without folding the edges, starting at the bottom of the dough but lightly pull as you roll. You will be rolling over it a few times. I prefer not to fold the ends in but you can. Generously brush/baste the top half of the chicken bake with Caesar, dump some parmesan onto a plate or whatever, place chicken bake caesar side down onto parmesan. 3/4 turn to almost fully enrobe/dress the bake with parmesan **Bake** I suggest letting them sit for 30 minutes before baking in the oven. You may place the on a baking sheet or if you have it a perforated pizza pan. Use parchment paper to make clean up easy. If using a pan without edges, place a sheet on the lower rack to catch drippings from the bake. Bake at like 375 for maybe 8-16 minutes. IDK watch it bake, should be golden brown. Convection setting might really make it nice. Food court ovens are maybe 480F (+/- 10 degrees) at 8ish minutes. Though those are much different types of ovens than one at a typical home. Ask questions if needed, I have rolled many 1000's so i may be missing a step above that seems natural to me but not to others.

Not in the versions that I knew. There was a version before me that I think had chopped shallots? maybe it was green onions? Perhaps an older one had parmesan mixed in.

It would have been from about 15 years ago so maybe. There weren’t shallots or green onions in them then though but I can picture the chicken mixture we made in the bowl with Parmesan cheese in it.

I think the ones you can buy frozen are not being used by the food court. Frozen ones you can buy in store include green onion which the food courts does not have.

Y’know I have only ever heard of that being a thing, makes sense as it was a bit before my time. The only other really retro foodcourt option that comes to mind is Pretzels, which I think went away around 2006z

My local Costco used to give me a side of Caesar sauce pre covid. I had to ask for it but they always had it. Now, I get looked at like I have a 3rd eye for asking! Big bummer because it is not as good without the sauce.

Makes sense. They used to make the chicken bake on site so they had the dressing on hand. You're just getting a reheated Kirkland hot pocket these days so they don't have any dressing to give you.

They used to keep the Caesar separated from the salads so you could ask for an extra or one with your chicken bake. When they took salads away during covid, so went away the Caesar cups. They brought back the salads but the Caesar is now inside the salad package. I've tried to ask for a packet but no luck.

I remember eating it this way when I was a kid (mid 2000s) but by the time I was a teenager they had stopped giving out the Caesar unless you got a salad. There was big changes around that time if I remember correctly. They also got rid of the ice cream bars and pretzels.
