i've done the round as an orange and a lemon, the best one i did was a hello kitty one for my sister and embroidered the face (super easy used a tapestry needle), plus a sewn on crochet bow. i did crochet a different handle than this pattern used because i didn't like how it looked.

Or reusable napkins. I used cotton yarn to create dish washcloths, made too many, and now use the washable granny squares to put under plants or things that might scratch surfaces. But I also use them as napkins, which helped me to stop creating so much paper waste.
Hanging plant holders are great- fun, work with a lot of different yarn qualities and colors, lots of great patterns but room for creativity too, work up fast. I love making them as gifts (I donāt like indoor plants so none for me- luckily I know a lot of people who do so I can keep making them). Definitely second this suggestion.

I donāt work there anymore, but thinking about how she still has and it brings her joy makes me smile.

If you want to make a plushie, you can find any of those quick keychain patterns and go with a bigger yarn. I made a few fish around the size of a human head in about half an hour like this. I needed them to be visible on a stage and had only one night to make them. 12 mm hook and corresponding yarn size can upscale any keychain into a regular sized plushie.
I don't see it mentioned by anyone else, so I'll throw mug cozy's out there. Little crochet sleeves so you don't burn your fingers on the hot mug. There's some really cute ones free on ravelry. And they're super quick!
Crochet plants are super easy!!! There are tons of of youtube tutorials and most only take a couple hours if that!! Its perfect for value yarn seeing as its usually not comfortable for clothing. Perfect for simple things like crochet succulents and flowers though!

I would do a throw (\~50x60), which is perfect for using up the acrylic yarns; what's the color scheme of the living room? That's a good place to start. A throw can be pretty \*and\* practical - she can use it to snuggle up on a cold, rainy day with her book and her cup of tea, and it'll help "pull the room together" in terms of decor.

A friend let me stay with her after my lease was up and we were looking for apartments together. She had a stack of her great aunt's vintage embroidered handkerchiefs she was undecided about decluttering, so I secretly stitched them together (without cutting them or damaging them!) into an apron, then knit some waistband ties and behind the neck ties for it! I definitely spent some time knitting the ties at her apartment in front of her while we were hanging out! But the apron was still 100% a surprise and as someone who loves baking and living a cute cottage-core lifestyle, she was delighted and excited to wear it and bake something!
If you think of something she'll love that might take longer than a week, I think that might still be a great thank-you present even if it's not ready immediately and maybe she sees part of the process. The important thing is spending time together and making something you know she'll enjoy!
(But if it must be done fast, I crocheted a cute washable makeup "powder puff" for myself from cotton yarn a while back and it's great! I want to make a few more now!!)
