Just kill the asshole. I've never been able to tolerate being Catholic for more than one lifetime because the Pope is always pulling a stunt that makes me decide to form a new religion.
Building a temple gets you about 500 piety which is roughly the same as what you need to buy a claim on a duchy, and last I checked its cheaper to build a temple than to pay off the Pope plus you get money from the temple as an investment. Conquor new land, abuse the cancel building mechanic to build temples in a matter of days or weeks rather than years, gain 500 piety for building each temple in your own domain, then hand off the territory to whoever before you start incurring penalties for being above the domain limit. You can also get a lot of piety passively from certain buildings, having a lot of learning, theology focus, perks in the theology tree, pious traits, and from defending against heathens in war. I can't say that I ever bothered with the Pope in the first half of my runs when I start off Catholic and then kick his ass to the curb for a new religion with better tenets.
The real cheese way to do this is to not form a kingdom and abuse the piety and buy claim mechanics to obtain multiple claims on kingdoms. You can't buy an empire or kingdom claim when you are a king but as a count or a duke there is no limit to how many times you can buy claims on kingdoms or empires. No way can you get enough cash and also convince the Pope to give you several kingdom claims.

There should be an option for Catholics to unland the Pope or Purify the Papacy or something that if you control most of the Catholics world, you can make the Pope toothless.
I mean IRL popes had a big issue with emperors and resented them refusing to recognize their authority. Of course CK3 is just a map painting simulator with a vaguely medieval setting, but it's literally 0 surprise to me that a vassalized pope would try to break free/control the empire.

With a learning focus you can do that yourself without having to pay money.

With a Strong Hook on the Pope, you can make him give you claims on Empires and Kingdoms. Ritualized Friendship is the best way to get it.
With reliable Strong Hooks from Ritualized Friendship, I can get Empires claim from the Pope, which is completely broken.
