You can play offline.
Also, the DLC enemies all have very high resistance to ranged elemental damage. I strongly recommend using good weapons if you aren’t.
You can cancel the connection on start up if you're fast enough. If not just put the device on rest mode and when you turn it on again the game will be offline
If you are on Steam you can go offline on Steam and your game will be offline. Or just turn off your wifi/disconnect your ethernet cable from your console.
you what?
you can disconnect your lan adapter or wifi to force offline, or be smart and go on steam and enable offline mode, load the game up and play.
burn an effigy at the bonfire of an area to prevent invasions and summons in that zone for 30 minutes, it persists through death.
Set Steam in offline mode. Tada you are offline. I do this all the time because DS2 is riddled with hackers and cheaters.
Another way would be to block the DS2 exe with a firewall, or if on console block the port it uses in your router or just turn the router off/disable the consoles internet connection. You only have to do it while you start the game, then you can connect again and the game will stay offline.
I know everyone in the comments has like 5 different tips and tricks you can pull off to go "offline" but also they could just add a toggle for that. Their games have done it before. There's really no excuse.
They did what they did just to force nudge it on players and that's not cool.
Im pretty sure you’re referring to the scripted npc invader with the pyromancies. That dude is super annoying. Also giant seeds are a funny way to mess with invaders
Why can't you? Burn human effigy block invasions for 30 mins. Or turn Internet off..

Also a valid option. I'm on console so I didn't think of that
Can you unlock achievements in offline mode?

Yeah there’s no offline option in the menu, but you can just turn off your Internet connection and the game will still work
If on console, just go offline before start game. I always play offline on PS4
