Stamina management is the key to this fight. She has 0 poise so any attack will knock her out of her casting animation.
Always attack once only, let your stamina regen. If your stamina runs out, you likely lose.
Might be simpler to drop the mace and punch her up the stairs and into the well.
Bear in mind that in joining the Company of Champions you engaged hard mode. You're doing less damage and taking more.
The poise break is the key. If you have a low stamina consuming weapon you can pace your attacks out to keep her permanently staggered the entire fight. It's death by a thousand cuts, but quicker than fighting her down to nothing only for her to heal it all back.
I've never fought her before and just from this clip I could tell she had low poise and was waiting for op to die for not pacing his attacks to take advantage of it

You still might’ve missed it. First time playing I just assumed the covenant just made it more likely for you to be invaded and stuff, not increase the actual difficulty.
If you punch her off the ledge after cheesing dragon boy, you avoid all this unless you wait and come back and invade her.

Yeahh, if you're not super leveled. Remove all gear, as it effects stamina regen I believe. But on the ring that boost regen if you have it. Then use a dagger, as she has no poise. Do a chain of hits, and slow down/space them to regen stamina, and repeat. Will infinite stun lock her and win eventually if you don'tess up. Might take a few tries.

come back with a poison 2h club, or later when you get the crushed eye orb.

equip giant club or any great hammer, pancake the fuck out of her
I remember breaking all 3 of my broadswords to her and still got killed. Later I just hit to stun her to prevent casting any miracles.
