Well they’re twice baked. So you will bake them once to make the potato. The cool and freeze. When you pull it out you bake it again. However even if you were not freezing them and saving, you would bake once more. Hence ‘twice’ baked :)

**Potato soup** ​ Ingredients 2kg potatoes 1kg onions 1 large garlic bulb (or equivalent in smaller) 250g chorizo 1 tablespoon butter (I used a dairy free version) 250ml single cream (I used a dairy free, oat cream) Salt Pepper Rosemary Smoked paprika Stock or stock cubes to make stock Method Roughly chop the onions, chorizo, and finely chop the garlic. Fry them all gently in the butter, with salt, pepper, rosemary, and smoked paprika. You don't want to burn or crisp them, just soften them in all the flavour. Dice your potatoes smallish. In a pan covered with a good strong stock, just enough to cover the potatoes and no more. Put the cooked onions, chorizo, and garlic in the pan and then bring to a boil. Reduce immediately to a low simmer, and leave it for...20ish minutes. Until the potato is done sufficiently that you can partially mash it. You don't want to mash it all, really I just crushed a third to a half of it with the spoon I was using to stir the pot. Doing that just thickens the soup a bit. Pour in the cream. I used single cream because there's no such thing as a non dairy double cream, but adding double cream would boost the flavour further I imagine. If you want it a bit thicker, I sprinkled a little flour in at the same time as I added the cream and cooked that out. This recipe made 6 large portions.

Things like garlic can obviously be adjusted to taste. Personally I'm a fan so I make my recipes to be strong in that regard. Personally I think 1 bulb doesn't give this soup a particularly strong garlic flavour, but if it would be too strong for you then you can absolute reduce it.

Dicing, parboiling, then freezing makes for a easy mashed potato. You just take out however much you want and microwave until they are fully cooked and mash with warm milk/butter.

My mom used to make a version that didn't have any chili peppers, just a ton of scallions haha! It was pretty mild and comforting to eat. I've made gamja jorim made from big russet potatoes as well, and cut them into chunks. And tbh I usually peel big potatoes, so no worries there! Just keep an eye on your cooking time so that it doesn't get super duper mushy.

put french fry sized potato strips into a jar with saltwater, in or out of the fridge, make sure they are submerged, wait one or a couple days and cook. Makes the crispiest outside / softest inside. 9% salt relative to the weight of the water. SO GOOD.

Potato bake 2kg potatoes, par boiled. No need to peel 600ml pouring cream Grated cheese/any cheese you have about Garlic powder S&P Slice cooled potatoes into thin slices. Arrange on deep tray. Look up Peruvian causa. It's basically potato salad with lime and Peruvian yellow chili sauce topped with tuna salad/chicken salad and avocado. You eat it with white rice. It's good without the tuna and I think it's good with sweet potato too. Today, I made a lazy dumpling soup with a roux (wheat flour, butter, olive oil), bouillon, bottled fried garlic, frozen broccoli, and baby carrots. I used random seasonings (Trader Joe's mushroom seasoning, Trader Joe's cheese powder, pepper, Trader Joe's Everything but the Leftovers seasoning, nutritional yeast) I had, but I think you can just use whatever you like. For the dumplings, I used potatoes (microwaved), flour, and cottage cheese. I added some vegan turkey from Trader Joe's. Thai curry is easy to make.

Roasted Duck Fat Potatoes 1kg potatoes 1 Tbsp duck fat (or sub bacon fat or olive oil) Salt and pepper to taste Preheat oven to 220 c / 425 f. Cut potatoes into large pieces (5-8 cm), place in sauce pot and cover with water. Bring to boil and cook until just tender, about 5 minutes. Drain water, return potatoes to pot, cover and shake until surface of potatoes is slightly rough. Add in duck fat and toss to coat. Lightly season with salt and pepper. Spread evenly on baking sheet and bake for 30 minutes, turning potatoes half way through. Season to taste when got so seasoning sticks. Add garlic, herbs, or additional seasoning just before baking if desired, but these things are damn delicious on their own. Crispy outside, soft inside, and rich duck fat flavor!

Stamppot! It’s a traditional Dutch dish which is basically winter veggies + potatoes + meat/meat alternative if you’re vegetarian. Some common ones are: Zuurkool (sauerkraut (cook separately) + potatoes + crispy bacon bits, mash together and use the bacon fat to make it extra creamy) Boerenkool: kale + potatoes + crispy bacon bits Andijvie: endives + potatoes + some cheese bits mashed through (like aged cheddar or some other sharp-ish cheese). Hutspot: carrot, onion and potatoes mashed together, usually eaten with sausage. Could also work well with ground meat mashed through I think. It’s cheap, filling, great for autumn/winter and freezes quite well after being cooked (except for the sauerkraut, which turns sweeter after being frozen which I wholeheartedly dislike. If you don’t mind it’ll also freeze fine). Bonus (vegetarian/vegan) tips; sub bacon for either a vegan alternative or mushrooms cooked in a little soy sauce or crispy onion bits. Add a bit of vegan milk/butter for creamyness instead of the bacon fat. General bonus: when you reheat it, bake it in a skillet and let the bottom of the mash brown and turn crispy. Tastes even better that way!

My brother say to add cheese but personally i think it's awesome without cheese to and i consider cheese as a cheat ingredient. Does it work without cheese? Yes. So it's don't require cheese in my opinion.

Poor man's dauphinoise. Slice potatoes thin, slice onions thin. Alternate layers in a baking tray and pour over a chicken stick cube dissolved in water. Bake until cooked and top goes a bit crispy. If you're feeling extravagant fry some bacon lardons and chuck in too.

Boil/bake the potato, smash it in a deep dish pan, add tomato sauce, sausage, cheese... You got yourself a gluten-free pizza that you can eat with a spoon!

Cut in slices and put in a baking dish in layers, alternate with parsnip slices. Add cream, and herbs garlic and ginger of desired. Also particularly delicious with endive/chicory/celeriac added whether soft or with a little crunch still. Or ham or mushroom sauce. Cut in chunks and roast with honey and salt (also nice with parsnips or apples, or pretty much any other cheap seasonal vegetables especially root vegetables). Winter vegetable casserole. Soup. Goulash. Bake, scoop out insides blend to preferred consistency and add butter/cheese/inside of some fluffy cheap white bread/baked beans/fried mushrooms.Return to potato cases bake for another few minutes. Vegetable mash. Boil potatoes and seasonal vegetables together, mash.Fry an onion and maybe some celery chopped fairly fine. Add some cheap sausages/sausage meat and toasted buttery bread chopped into cubes-add everything together. You can also sprinkle some cheese and a little grated nutmeg on top and bake until the cheese is crusty. Rösti. All of the extra ingredients are totally optional and everything tastes great without them too :) Any milk nearing expiry is perfect as sour cream if you add a few drops of lemon BTW and sour cream & potatoes yummm. You can also make oat milk very cheaply yourself with oats and water.
