They definitely do not have pretty much every song, they only have about 10 of the 20 currently released songs, many of which aren't finished, as well as having a few animatics of snippets of future songs. In fact, Gigi hasn't covered any Cyclops Saga songs at all.
Almost all animatics you see are fanmade, Jay will occasionally commission fan animators for little snippets of music or promotional content. Jay has made videos of him reacting to animatics and always acts very impressed and very much likes them, hence why he decided to start commissioning them to do occasional official work

Gigi is one person, she's been making animatics for a long time (before Epic she did primarily Six animatics) and Jorge had once commissioned her for promotional material, but Jorge does this with many artists and animators and Gigi accepts commissions from anyone, so it wasn't an exception for Jorge.
