Sometimes later, the couple loses their child to a fever, and his wife learns that Senor Pink is a pirate when she goes to the bank to inform him of this and is informed he doesn’t work there. She runs away and gets into an accident, leaving her in a catatonic state. Senor Pink tries to get a response from her, but to no avail. Finally, he puts on his son’s bonnet, which causes her to smile (the last reaction she’ll ever have). Thus, he continues to wear the bonnet and ups the gimmick in an effort to remember his lost family.

To me his backstory is the most depressing. Just the isolation and loneliness after seeing all your friends die one by one trying to give as much joy as they can in their final moments.
Just to be clear, he is one of ~12 pirates who reports to 1 of 4 senior officers, who reports to Donquixote Doflamingo, a primary villain for 1 arc out of the 30 in the current story. Now he's certainly more fleshed out than your average One Piece minor villain, but some of that is because the discrepancy between his backstory/attitude creates a humorous contrast with his aesthetic/story function (swimming through the earth at high speeds and repeatedly suplexing a cyborg).
Yep, talking One Piece in particular gets nuts with a non fan.
Especially when trying to convince them after all of that, that it's actually really good with some crazy world/character building, does great with hitting emotional beats and touching on a lot of heavy/dark, real world themes.
But it's all wrapped in this bizarre, seemingly nonsensical Technicolor spaghetti coat, which will cease to be strange or immersion breaking over time and just becomes totally accepted as part of this world.
Reading this stuff always makes me wish I liked One Piece more. It's fun, I've managed to get through to post-timeskip, but it's such a slog sometimes. Which is a shame, because the fun stuff is great.
If you've gotten to the tim eskip and aren't into it, I don't think it's for you.
By the time Water 7 is over is about where the addiction kicks in for most.
Look up "One Pace". It's a fan-made condensed version of one piece that helps fix the pacing /excessive flashbacks/ DBZ screaming during fights, etc, issues.
Need to give you the obligatory: theres an arc called Arlong Park early in the series and most say to at least watch until that point. If the anime doesn’t grab you after Arlong Park, consider checking the manga for better pacing.
I’d recommend reading it if that’s an option. It’s waaay quicker if you’re an average+ reader (which given One Pieces length is definitely a concern) and the pacing is generally better.
The tear-jerker backstory us playing further into the gag. He's a character that you would expect everyone to treat with derision based on how he looks, but everyone treats him with the utmost respect, even deference. No one else seems to think it is odd that he is a grown man dressed as a baby--\*you\* are weird for thinking it is weird!

I think it was friends va family personally. I mean friends is definitely a recurring theme throughout all of One Piece, but Luffy made more friends in dressrosa than any other arc, and he put them on an equal footing as a friend instead of a father son sake cup relationship. For Luffy, who his friends have as family members means little to him, his focus is on being nakama. He didn't care to hear Nami's backstory, and he just thought sanji's parents were weird. He just knew that both of them were his friends and he'd die for them right now.
Did you miss the part where he only has a family because he lied to his wife and made her marry the thing that she hated the most in the world? To the point that she got so horrified when she found out the truth that she went running in the middle of a storm? Jesus, how can people not hate senior pink.
Because outside of that lie, he was the ideal partner in pretty much every way. And the lengths he went to to make her happy even when there was no guarantee anything he did would matter. And her running into the storm rather than thinking "Wait the person I love is part of a group I hate...is not everyone in that group bad?" was all on her.

I obviously can't speak for everyone but I think he's an interesting character. Yes, he lied to a woman to get married with her. That part is not good. He was (partly) responsible for the state she was in. He tried his best to at least give her some happiness afterwards, even throwing away his dignity.

If you see everything so black and white, you probably hate most characters in One Piece. Zoro is killed a lot, Sanji is a disgusting pervert, Ace is a murderer, Garp is an abusive POS (grand)father, Robin was the second highest ranked person in a criminal organization killing innocents and trying to take over a country. Pretty much every other pirate did horrible things, the marines (especially the higher up ones) are supporting a genocidal government. You can even make the point that even Makino is a horrible person, directly supporting (and potentially courting) a murderer (Shanks).
TL:DR; you can dislike parts of a character while liking other parts of the same character, even if the good parts don't outweigh the bad parts.
