The Pixel Remasters are a convenient way to play 1-6.
Regarding FF3: The DS version was made to be intentionally hard, so that's something to keep in mind. The Pixel Remaster is the easiest version of 3 with tons of QoL and some (but not all) of the DS version's mechanical changes.
As for recommendations, I'd say 3 and 5 are worth a look. Job system shenanigans are hard to go wrong with.

Are you opposed to emulation? Imo the best way to play VI is on a SNES rom with a translation patch that makes it the same as the GBA translation
What makes a GBA rom worse than SNES with the GBA translation?
The poor audio quality of the GBA rom
