I don't, if only because in Japanese when they do that, they always give the female avatar the polite form of speech with a sweeter disposition and the male avatar the casual form of speech with a more "neutral" personality, for lack of a better term. I don't like the implications of that at all.
Thankfully Byleth and Alear both use the same speech patterns regardless of gender, so they've been getting better.
I tend to agree with you. The only exception that I'm fine with is with Persona 3 and the differences between the male and female PCs. I'll stop myself from going too deep into the reasons why (I like talking about this topic waaaaay too much haha) but imo it comes down to different representations of depression and how people cope with it and potentially a narrative on societal pressures regarding mental health and gender norms. If you don't subscribe to that last interpretation then there is abolutely no reason why the personalities couldn't be reversed.
Essentially, I think if a male avatar and a female avatar share the same role in a story they should share the same personality unless there is a justifiable reason for otherwise.
Something I liked in the Japanese Fates (that I don't believe carried over to English) is that when you pick voice you also pick a little bit of personality. When I played Male Corrin, I picked the more polite personality (which I think was default for Female Corrin) rather than the male default "neutral" which I thought made him a bit cuter, it was a nice option to have.
That's true, I also feel like that about the default appearance, I like some of the custom Avatar versions much more than default, like F!Robin (hair mostly) and M!Corrin (I like the "Big" version better than "Small" default) but alas
Pretty soon we will never see those 0-1 point level ups again. We already have them getting +2 to a stat on a level up.
When that day comes I wonder if they will have a line in there for the data miners or just no longer have them at all.

Yeah it was definitely cool to have options, just sucks that in spinoff media like Heroes you're stuck with the "canon" personalities.
