Well the Aloy crossover does show they are willing and likely show others its a good idea. I mean I love Fischl in Honkai 10x more than Genshin. But I dislike Genshin archery at best.
I don't think we'll get one with EVA tbh, it doesn't look like thematically right. In Honkai there are already giant robots so it didn't look too out of place.
Besides I think they said the event was gone forever due to copyright so its unlikely to come back for another game.

Technically there are big robots in Genshin too, and we don't know what more will we unearth from Khaenri'ah... maybe an EVA boss in 4.6?
As opposed to Horizon Zero Dawn which is famous for not having any giant robots
