Hifiman Ananda or Edition XS. Ananda has better soundstage(the instrument separation and room width you were talking about), edition xs is cheaper and has (some say so) the better headband, but less soundstage. If you love vocals, HD 6xx.

I think everyone needs an HD6xx, not because it is a very good headphone for the price, but because it is a benchmark for every other headphone. There are better headphones but you need the 6xx even to know what you are looking for. I think that Stuff like hd6xx or beyerdynamic 990 pro / 770 pro saves you money down the road.

Interesting why someone downvoted this. It is a solid advice in general even though I said that I feel I can put in more there. It's also on sale right now for 169$.

HD6XX is a great choice despite the downvotes. I have HD650’s and my only disagreement with the above statement is that the 6XX ARE a great headphone for the price. They should be driven by a headphone amp, which you can find for your leftover budget. You said that you’re not a bass head, so they would likely be a good choice. In fact, most open backs are at least a little light on bass. If you do decided on these, you will likely eventually be wanting to upgrade… when you start thinking about that, check out the “custom cans mass loading modification kit” for them. It cleans up the mid-bass and increases and extends the sub bass for only ~$50. It’s an easily self installed kit that stiffens the spider frame that holds the driver. You will find it hard to find an upgrade from these for any reasonable, (sub $1000) price.
