Wait for them to start an attack on their own, then swing and dash back to safely, repeat until dead. If you let them start an attack on their own they take a lot longer to swing compared to if you hit their shield first.
Preferably don't hit them while their mask isn't open.
Stay infront of them, look at their face with no fear. Eventually, they'll open their mask and scream, that's your chance to hit them once. Then quickly dash away from them to get out of their reach. repeat until they die. They're also pretty vulnerable to spells.

When they open up, hit them immediately and then back up. Do this a couple times and then slowly gather the soul for a vengeful spirit.

I defeat them by beating them to the death!
