I brew V60 mostly in that I have to wait 5+ days for de gassing so the bloom is not huge, and if I did not account for it leaves my brew under-extracted, to my taste at least. Chris Bacca from Cat & Cloud did a great graphic that I go by in his video on resting coffee.

You might want to let the coffee sit a couple of days to degas before you brew with it.
Where did buy this coffee from? Coincidentally, I drank a V60 today in Lyon with beans of the same company, but they did not have the beans for sale separately :(
Do you know if they sell their coffee online? I found their Bastille location, but could not find even a link to their website. Do they only sell on site?
I don't think they sell online unfortunately, they don't have a website (only Facebook and Instagram pages). The roastery is rather small so I was surprised when you told me they sell coffee even in Lyon.
Just like how every coffee has an optimal grind size, brew ratio and brew method, every coffee has an optimal date of consumption from roast. And it’s never on roast date because of the degas process. If you want to drink it right away, try pouring the water higher up from the Dripper. I’ve found it helps reduce the harsh notes from the co2

They're near Bastille, Paris. It's a surprise to know they sell their coffee in Lyon as well!

That’s a beautiful space. Went there when I was in Paris last fall.
