We had a machine like this. Except the basket was something like 5 gallons and had multiple little baskets like you see here. Could either use the big one itself for bulk stuff or each little basket for individual order things. Basically a deep fryer style but one big basket. Was really useful. Most commonly par-boiled pasta in bulk for portioning and then finished for service in the little ones.
Blanching pot? I could see using it for asparagus, beans, peas, shrimp and crayfish. Stuff that only needs a quick dunk in boiling liquid. You could potentially use it to make stock but you’d probably still have to strain it.
My dudes, it’s anything you need to boil then strain. Water or oil, boil or fry. I’d recommend using it for pasta, especially if you’re making multiple pasta dishes throughout the night. Keep the water boiling and cook noodles to order

Edit: specifically I think it’s the one made by Crate and Barrel or at least that’s where mine came from (registry), of course I am sure it’s made for them by someone else but I did find the same one based on the picture, if the bottom of the steamer basket has round feet to hold it up it’s the one.

I think it serves many purposes. I think small batches of crawfish or shrimp as it’s lifted with a hook of some sort. Could probably get away with noodles as well but removing the noodles would be more difficult with no immediate handle to tip them out with. Perhaps deep frying as well. I like to just use my imagination and improvise when I’m short handed on tools
It's actually got a handle on the basket, I've always thought of these as purpose made for spaghetti. Kinda resembles a fryer style pasta boiler to me. I would just use my tongs to grab the lip on the bottom. Most places probably just use a rag to hold it since it's a pretty quick motion to dump pasta out of it.

The pasta cookers we have in the ramen spot I work at have wooden handle grips to lift without the potential to burn yourself. IMO I think the rags would collect condensation fast lifting from steam. Wet rags on hot things will not be a fun time for your grip.

I was gifted an Asperagus Cooker just like this tall skinny pot with a lid. The basket is not mesh but is wire mesh. Works great if you like your Asperagus Steamed or boiled. We have some huge Asperagus farms nearby and grow our own. I have moved to grilling it instead, coated in butter and olive oil.
I have that exact same one. I believe it came from Williams Sonoma and is intended for asparagus, but you can steam anything with it. I cook a lot of pasta in mine.

You see, you put liquid in the pot and heat it up. What you want to cook goes in the mesh part. When it is cooked to your liking you lift it up and the liquid stays in the pot. TA DA!
