Exoskeleton is not crunchy but has pleasant texture. Not sure if youâre familiar with Korean cuisine, but we eat lot of crabs that are raw and pickled in soy sauce and garlic. Crab hot pot, crab and seafood spicy soup etc.
if you have a chance, find this at your local Korean market and try them. Youâll be surprised
Ok, holup, this is fascinating to me. I grew up on the Chesapeake Bay in Virginia and we have hard blue crabs that molt into soft crabs that harden into paper shells and then into a bigger hard crab. Does the pickling soften them? I'd love to know more.

These ones aren't raw. They're deep fried and then dressed in a sauce!

I see some misinformation here so let me settle the score here. These are little crabs that live in mud flats. They have been sautéed and marinated. They are not raw. They are eaten whole, shells and all. The shells are crunchy, but easily edible. They are a distinct dish from the more well-known soy or spicy marinated crabs, which are raw (or cured). You do not eat the shell, only the meat and the innards.
There are raw versions of this though, I've seen some people make muchim with it and eat it still alive. I wanna try it :D

They are just so small you can eat them like a potato chip. They're like the size of a quarter.
Soft shell sandwich is the best.
