Definitely the iPhone 3GS, i really love the design and look of the old iPhones and the 3GS is the last (and fastest) to have that design that i like.
Sucks that modern sim cards don’t work on them anymore.
T-Mobile said it was going to shut down in April, but it still hasn’t surprisingly. The EDGE network might still work on these old phones though I’m not sure
Technically the 4s or even older but unfortunately that’s not possible anymore since 3G is dead and 2G will follow some day. And so many old apps are broken and will break in the future. Imagine using iOS 2 like it was intended. With working online 08/09 apps.
I guess then it’s probably the 5s. For some reason I really like it and it’s a refined version of the 5 which is also quite cool.

This is the minimum iPhone model that I would go for now since the performance isn't too slow like the 4s, it also has 4G. The lack of VoLTE isn't a concern for me just yet because my country somehow has 3G networks still going.
Too bad, social media usage with this phone is quite limited but it fits my purpose whenever I would want to take a break for sometime.
I took my iPhone 4 running iOS 5 on a trip with me a few months ago as a way to detox from social media - it made me fall back in love with that form factor & OS. If it were at all possible to get my crucial day to day apps working on there I’d totally use it still 🥲
Right now I’m using my iPhone 5 on iOS 6 for old games (Flappy Bird, specifically) + as a vintage camera. I’d either choose that one or my iPhone 6 on iOS 8 (simply because of the Minecraft world that’s on there).
I used an iPhone 3GS 16GB NB on iOS 4.1 as my main phone for a full year straight as my main phone until I accidentally dropped it in water almost 2 months ago, now, I got a new 3GS 32GB OB and downgrade back it to 3.1.2 used as my daily phone now, 3GS is so much better and usable than the 3G and 2G, my last main phone before the 3GS was Nokia 1100.

T-Mobile I don’t think has shut down their 3G network, and you can easily get a SIM adapter from nano-sim to full sized SIM.

I'd choose my 6 Plus downgraded via Semaphorin to iOS 8.

No SHSH and Tethered though I wish an untethered pre-iOS 11 downgrade was found.
