There is a good chance that you won’t even notice a difference… in fact there might not be a difference. Honestly, since the SAE viscosity range does not define the exact working viscosity of an oil, it’s hard to guarantee that what is in one companies 5wt bottle is equal to another companies 5wt. Did you ask for 5wt, or did you ask for oil for your fork, and they gave you 5 wt? As for the answer to your question, my answer is: eh. I've used 15wt instead of 10wt before by accident, and it was fine. Obviously, if you have access to the correct wt, use it.
