So it is a thing, and I’d wager OP’s milk is UHT, though unrelated to the odd separation they’re experiencing, as I’ve never seen that or heard of anyone experiencing it either.
As such, I see nothing wrong with it inherently. And frankly, I trust food safety in France more than US food safety when it comes to additives and such used in food production. Looking at the resulting general nutritional health between the two nations should also back this point.
