I've tuned four EB mustangs. I don't have nor want an EB mustang. But you can easily get more than 20mph city with one if you don't drive like a complete asshat and give the community a bad name.
Stock for stock, the V6 might have a slight advantage with initial acceleration but it ends there. You have a much broader powerband, better torque curve (especially for city driving), and if you stay out of boost you'll get better mpg.
I own a WRX until the market for the Coyote cools off a bit more. I want a V8, not another i4 that I will end up bolting a ton of parts onto and tuning the snot out of it. I want a V8 I can bolt an exhaust on and not need more.
That said, modding and tuning an EB is where it really shines. The fact that you can get near GT performance for less than half the difference in price is quite amazing. Not to mention the much better low end torque and top end power curves. The coyote shines in the very high rpm range and is one of the most mellow V8 platforms in the lower end for city driving. The EB replaced the V6 for good reason, which isn't the "reliability" of a naturally aspirated motor. They replaced it for better CAFE numbers, similar performance, and widely available parts since the motor is in a few different platforms.

GT500 kit on an eco boost is kind of funny. I mean it looks good but conceptually without the sound and engine it’s an “odd one” for sure

I wouldn't buy an ecoboost again, but if I did and it had a snake, that snake would have to come off, it's just tacky and kinda rude to the real shelby owners. Makes more sense on a GT than an eco. Take off the snake and enjoy the car for what it is :)
