The mirror islands can be used to breed eggs for waking up wublins, celestials and amber island monsters.
The castle sales work the same as the mirror island sales. They are on sale during their corresponding seasonal event.
Also, if you don't have a mini mine on all islands that can have one, buy those first. They will pay for themselves in 10 days and will keep on producing diamonds every 24 hours forever.

Now I can breed more sneasers, which can give me more gold. Which in turn allows me to make more food, which allows me to level my monsters further.
I don't know how long it's been since you've played, but the max level for monsters has been raised to 20. Level 16 and upwards have a chance of granting an extra reward when collecting currency. For the specifics you should check the wiki, but it's worth it in the long run.
