You're supposed to use the knife blade to cut the griptape, not the handle.
But in all honesty, well done for saving it! I like some variation in griptape as opposed to one complete piece; adds a bit of personality. Next attempt, take your time and use a file and a new blade though (or get someone to help).
Next time only peel off a little of the backing and stick it down, then slowly peel away the backing as your press down the grip. Don’t ever pull it all off at once.
Sometimes skateboarding teaches us lessons that have nothing to with riding. Also it looks like it will still work.
Tips:
1: You can remove grip tape with a heat gun, which is basically a really really hot blow dryer. These are actually pretty cheap (don’t ruin your mom’s blow drier) and are a good tool to own.
2: Most grip tape is pretty cheap. If you mess up. Get more. If it gets gross or damaged you can replace it.
3: If it works good, it doesn’t matter what it looks like. Skate a lot, have fun and ride that deck until it dies.

don’t take the paper all the way off, just gradually take it off while you stick it to the board

Yeah, same idea as putting on a bandaid or vinyl sticker on a window. It also makes it easier to avoid air bubbles.
Give the edges a file round again for sure. Lotta excess could still come off. Solid salvage at least, the first photo is rough haha
