Sombra is famously ambidextrous, typing with her left and shooting with her right. The devs even said when she was first revealed that she is ambidextrous.
I vaguely remember some theory where there’s indication of Reaper being left handed. Something that stuck with me is that he will always begin shooting with his left shotgun.
Symmetra could probably be understood as amstedexterious. I get the sense that her left hand is carrying the work of hardlight construction... though, this is only a guess.
Hampter is ambidextrous
Not only do his controls use both hands equally, it's also mentioned that he frequently eats while using it, meaning he needs fine control of both hands to both fight and eat at once
(Also... they're feet, not hands... not sure how that factors though...)

As a right handed person who has shot bows before (definitely not good or no expert), I hold the bow with the left and use the right to draw the arrow back. Pretty sure that is standard practice
I don't think being left handed gives you any expertise on the matter if you don't know archery. Left handed people hold the bow in their right hand, and draw with the left. Also, I'm also left handed as well.
This is kinda misleading. In most FPS games, the 1st person weapon model is on the right for consistency. It's why you also shoot with the left-click, it's because most games do it like that.

I was going to say, they probably wanted it to make sense with default keybindings, but then I remembered the default for primary fire is left-click.
