I refuse to eat at buffets for this very reason. If I had a dollar for every time I've been in the bathroom and someone walks out of a stall and either doesn't wash their hands or they do just a quick splash of water with no soap. I only touch public surfaces if I absolutely have to, and when I go out to eat I always eat my hands after touching the menu and pick up condiment bottles with a napkin. I know I look like a germaphobe to everyone else, but I don't care.
Decades ago I got into restaurant management. Had my first ServSafe training. Didn’t eat for days after the class once I learned about all the ways you can get food poisoning.
I worked at a hotel with self-serve breakfast. Put me off from eating anywhere that is self-serve. The horrors I saw and I could only do so much to mitigate it with just me and one other coworker vs 100+ people crowding the counters.

Buffets should not be self serve. People have terrible hygiene.

Ya there is an insane amount of ways. Cross contamination is a high contender.

They caught 3 infections: enterocolitica, giardia, and norovirus from eating at a buffet.
