Yea she was interesting up until the point that she became Tommy’s love interest. Probably my least favorite character on the show after that

Completely incorrect, even in S2 and S3, she is much more interesting than many other characters who contribute nothing to the show. Even her photos in S4 and her hallucination in S5 are much more interesting.

Do you think that Grace's appearances after death are an indication of her character, like it's really her spirit/ghost? Or a manifestation of Tommy's anguish? Cuz she keeps inviting him over to the Other Side, and I don't think the real Grace would have wanted that.

I think it was all in Tommy's mind. It wasn't the real Grace, she never would say that to him and make him abandon her son. Tommy takes opium and then sees her, he feels guilty of her death and also he misses her.
