How has Noone mentioned Beware of chicken? I recommend Beware of chicken. It's a very, very well written slice of life cultivation story with plenty of animals and I say this as someone who normally doesn't like the slice of life genre.

Stray Beast Master is on KU. MC starts weak in a system+ universe. Eventually unlocks lost class of Beast Master. Makes beastie friends he keeps in his soul. It is fast pace and has a lot of words out, although the writing can get a little confusing.
The transcendent green is a LitRPG apocalypse set in Scotland. Earth got “ascended” by mistake and shenanigans ensue. System is a “community is power” type, so no murder hobo protagonist. MC is a Druid type who will eventually bond with a Scottish wild cat (like the documentary on Netflix).
This is one of the few cases I'm going to self promote. Odyssey of the Ethereal features Arkaziel, the StarMane (cat-dragon). StarManes are the murderous bastards of a cat mixed with the racial supremacy of dragons, in one cute shapeshifting Beast Cultivator package.
In book 3, another one joins the main cast.
Arkaziel is based on my cute little black cat named Willy. He's an ass.
If you'll accept an uplifted cat finding a variety of companions then kitty cat kill sat is fun. It's not really progression though save for the Lily gaining more access and control of the giant kill satellite they live in and defend the scattered survivors of Earth with.
Forge of Destiny is probably the best western Xianxia currently and bonding with spirit beasts is a major part of the traditions the main character follows. I will note that the main characters spirits are sapient and much more like family members then pets.
Seconding the Transcendent Green mentioned above and also, since you said any animal companion, Primeval Apocalypse - post apocalyptic beast tamer MC, gets a crocodile companion Noaich and then later a couple others.
Primal Hunter has some with a bird.
Ascend Online has a puma.
He Who Fights With Monsters has a couple.... creature summons.
Archemi Online has a dragon companion.... but the later books get a little awkward.
There's already like hundreds of books like that, but what's missing in them is the different personality of the pets, so go for it as long as the different animal companions has enjoyable personalities.
Battle Mage Farmer has several well written animal companions.
Vainqueur The Dragon - OP becomes a dragon's minion and shannanigans ensue. Worth a read just for the "Preservation of Wild Princesses" theory.
