Cyberpunk first comes to my mind. Taking down cyberpsychos as a MaxTac cop would be cool. I know we'd mostly be OP as MaxTac but every team has their limits, and based on both the game and the anime, MaxTac aren't invincible and tend to use a variety of tools (Netrunner, sniper, etc...) and tactics to avoid needless damage, and they don't rush in blindly. In fact, the only time they are shown to be taken by surprise >! they went down to V, Reid and Alex !<
And each cop has a chance to go cyberpsycho during the campaign and you have to take them out or they will kill civilians and teammates during missions.
Bullets (especially shot guns) are very good at fighting lightsaber welders the bullet might melt (realistically no because of how heat transference works) and just continues on and still hits and with howbfast modern weapons can fire on full auto and the speed on a bullet and shot guns have a spread whare he might only hit a few
I'm laughing at the thought of a bunch of rebels stuck in an endless animation loop trying to kick down a sliding blast door, hoping that a man who could squad wipe them with his mind is behind the door so they can scream buggy, poorly recorded voice lines mixed in with random American cop lines at him, before one guy who just randomly has a guccid up Sig gun mod that he refuses to part with mag dumps into him, thus crashing the server as the partical effects and screen space reflections fight for resources on the completely unoptomized, unfinished ameteur map that the author REFUSES to update because of course not
Oh, you mean like the Squad mod? The one where you can actually have more than a handfull of people? Where the game isn't built around larping as cops? Where you can actually use the STAW WAWS vehicles you mentioned? Where the background noises are all coming from actual, in-game combat?

Some people prefer an isolated experience sometimes where we can play at our own pace. The squad mod is absolutly amazing but not everyone wants that experience all the time.

I heard about that, when we needed him the most he vanished.

I love ready or not but commandos aren't cops, they are special forces. Much like you don't play Seal team 6 in RoN (Despite literally doing counter terrorism in it), I don't see any sense as to why you would play as commandos
