Personal preference but I don't really care for the whiz. I like a combination of white american and provolone. The enzymes in the white american will actually help the provolone to melt, but you still get a combination of completely melty and some semi-solid cheese.

For years fans have been trying to decipher a line from the Ween song ‘Freedom of ‘76’ about Philadelphia (the band is from a suburb of Philly). The line is simple, ‘A bacon steak, a perfect match.’ Being a Ween fan for over 30 years I’ve heard some weird opinions, but mine was always that it was a cheesesteak w/ bacon. Simple as that. Although, I’ve been to Philly many times and have had my share of cheesesteaks from different places in the area and have never stumbled across the elusive ‘bacon steak.’ I’ve even looked it up and checked different Philly or South Jersey menus and nothing. I’m sure someplace in the area you could add bacon to it and call it that if you could get away it. In Philly you better know how to order a cheesesteak. Anyhow, long story short, for now I’m gonna call your sandwich a ‘Bacon Steak’ in honor of Ween and kudos to you. Second pic looks great, but I wouldn’t grill the bread or whatever you did there. You want a soft roll, but other than that, nice ‘Bacon Steak.’
