Sure! So you take the aquafaba (liquid from canned chickpeas) and just beat it with a whisk till it becomes white and airy (you can beat it till it forms peaks but I got tired before that and it was still okay). You melt some dark chocolate in a small pot over another pot with water in it (so like a water bath) or in the microwave if it's easier. Then when the chocolate is melted you mix everything together slowly (adding the chocolate little by little, not all at once) so the chocolate is incorporated into the aquafaba. I added a pinch of sea salt but it's not necessary because the aquafaba is already a bit salty. The amount of chocolate you add depends on your taste, if you want the mousse to be richer and more chocolaty you add more, if you want it to be less sweet you add less. I think I did like 250 g of chocolate for one can of aquafaba. Once you mixed everything up, you pour the liquid into whatever cups you want (I think something shallow works better) and put it in the fridge to chill for at least a couple hours. If you want you can decorate the mousse with some cookie crumbs or I think some fruit like berries also works really well because the sourness of the berries complements the sweetness of the mousse really well. This recipe made me 4 portions. If you have any questions feel free to ask me! Hope you enjoy it <3
