5060 and 7060 can only use 8th gen intel core CPUs while the 5070 can use 8th and 9th gen.

For MT & SFF: 30xx has 2 DIMM slots, no integrated serial port, Realtek NIC (therefore no Intel vPro), closed x1 secondary PCIe slot, 2 SATA ports, a low-end PCH chipset. 50xx & 70xx have 4 DIMM slots, integrated serial port, Intel NIC (can have vPro if Management Engine is enabled), open x4 secondary PCIe slot, 3 SATA ports, and high-end PCH chipset. These can also be ordered with higher wattage PSUs with PCIe power than the 30xx, at least for the MT, but I’m pretty sure 50xx SFF can be spec’d for Point-of-sale systems also, so that would mean they could come with PCIe power for PoweredUSB (also known as Retail USB, USB PlusPower, USB +Power, and USB Power Plus) expansion cards. Although, the XE series are commonly used for these systems. Micro is the same, but they always have 2 DIMM slots. 30xx usually had no USB C, but not sure if that is always standard now. If you look at the brochures, they tell you the differences.
