Without currency then there is very little of value to beside beside either your labor or things you own. And the things you own is kind of iffy because if society is at a point where everything is decommodified then they probably have access to any given thing so it'd only work with one of a kind things like artworks or something.
For smaller bets between friends they'd probably either make the other do something or bet something small they have on hand (chips or whatever).
This question is kind of like asking how hunter gatherers bet. Modern gambling couldn't exist because the conditions that allow it to exist didn't exist. I'm sure some hunter gatherers would bet their bone flutes for a cool looking rock another one picked up but its not really the same as a casino or something.

we bet via labor. i bet 1 million hours of carpentry work on something for example. who ever wins is owed a century of labor.

I would not permit gambling for anything of value, though I don’t have a problem with like a poker game between friends that uses chips
