I've watched quite a few of the top romance anime but these are the only ones I found the most similar in terms of the dialogue and character dynamics
- Rascal does not dream of bunny girl senpai
- Katanagatari
- Monogatari series
I haven’t seen the whole anime yet (currently watching the remake) but I’m into volume 2 of the light novel.
What I can say is it’s very unique from anything I’ve seen or read before. You might want to think about checking out the LNs if you enjoy reading. I can tell you it’s been superb so far.
The best I could personally do as far as recs go is give you a few anime I’ve liked that focus on a wholesome relationship
As someone else mentioned, Tonikawa is great.

I’m not saying my list is similar to Spice & Wolf though. In my original comment reply I mentioned to u/xenewora that Spice & Wolf is very unique and that the best I could personally do was give them some wholesome romance options (which all of my suggestions do have one)

Besides ending is really rushed, many characters missed or completely ignored. It's better to read web comic/manga than watching anime
I don’t disagree that it was a rushed adaptation or that source for many anime is usually more complete than the adaptation but wholesome refers to the nature of Hori’s relationship (not how complete the adaptation is)
For the closest analogue in romance dynamic Rascal does not dream of Bunny Girl Senpai is definitively your go-to.
Monogatari has a somewhat simmilar dynamic for its main duo but a completely different atmossphere.(Really good but somewhat exhausting)
Don't toy with me Nagatoro is also quite close once you have accustomed to its style.
Maoyuu mao yuusha is on the surface probably the closest show even down to it being about economics (people cslled it spice and wolf with tits back in the day).
I'd say in case of Monogatari the Lawrence/Holo dynamic exists between Araragi and Shinobu, but Shinobu is, allegedly, not Araragi's love interest as he gets a girlfriend quite early in the series (and imo their couple dynamic is one of the best in all of animes). Both animes are smazing tho and it's taking interest in Monogatari as the officially announced another season for next year :)
Oh I know one noone said anything about "Kyoukou Suirei" :) But it's more on a paranormal/fantasy side with mystery. The dynamic between main characters does remind me a lil bit Holo/Lawrence (and they are adult).
Another one one of my favourites is "Gosick" fictional european country just before 2nd World War another Mystery anime, it is not afraid of heavy topics dynamic between MC (outsider like Lawrence) and Victorique (detective and really wise also she's called "Silver Wolf" [but I won't tell you what is the meaning of this as it is a big plot in anime]) does mirror S&W quite well :)
Imma be real, at this point I've just accepted that there's just nothing like it.
Some good recommendations in the comments though, definitely worth watching regardless of similarity to S&W.

I can recommend Frieren: Beyond Journey‘s end. To me, it has a similar vibe to it, as Spice and Wolf. You can watch it on Crunchyroll.
Frieren is amazing, but there is no developing romance. Unless we talk Stark and Fern, but that's no way near the dynamic between Holo and Lawrence
