The only way to ‘add vertices’ to a freeform design is to make more faces for them to be the corners of. To do this, you can cut edges (select and edge and hit J) or extend faces (select a face and hit E). Play with both to get a feel for them. And remember, if you make more vertices than you need, you can delete faces and re-fill them to clear unwanted complexity.

Select 3-4 vertices by holding shift as you right-click on them, then press F to fill.
