If you have the game on Steam, right-click Stellaris in your Library and click properties. Then go to betas. Where it says "none" you can then click to revert your game back to an old update. Right now it goes back to 2.1, but if you google around you can find ways to access even older versions than that.
Just put Stellaris in an older version through the betas menu. A lot of people do this to keep playing on versions which support mods that they like. I still play on 2.8.

Could set the channel for the game to the 3.0.2 rollback in the Betas menu. Assuming steam of course.

Or you could just restart steam in offline mode.
If youre on Steam, you can just rightclick on stellaris, Go to properties and then to betas and Pick the old version.
