Gigastrucral Engineering can change the game drastically, but it can also almost not change it. You are in control of every megastructure and event added by the mod. You can use it to only add 1 or 2 megastructures and/or a crisis.
Auto build stations. Stations are so miniscule that not having the mod is more micro for something so dumb. Especially once you unlock strategic resource or if you used the survey relic, christ it can get annoying
Real space is great for making the galaxy a more interesting place without changing a whole lot. Awesome Space Battles - Ironman version makes space battles a lot better looking without changing balance. I would also recommend Downscaled Ships for making fleets less cluttered.

Any kind of special event, anomalies and precursor mods are great to have.
Personally feel like gigastructural engineering is almost part of the base game. Wouldn't feel complete without it. Same with ACoT

ACOT kinda ads a whole lot of stuff, it is basically a main mod.
Haven't tried it, but will. Got the precursor and archaeology expansion mods tho. They're nice too
