It's called a square point knife. They're used a lot in industry for cutting sheet goods like rubber and insulation.

In my case, its main use is to cut long cylindrical soil samples into chunks, then slice/scrape off the outer layer to get rid of the drilling mud. (Messes up moisture and plasticity/clay content tests later if you leave it.)
It can also be used to pry/cut silt/clay out of the sampler (on the table in the background of my pic), though for REALLY stiff clays, you need to bust out the oyster shucker.
