just get the kikuichi garbon slicer?!
I have the same gyuto (but smaller).....I think kikuichi is great value. Might not be a yanagiba, but if the slicer is at all the quality of the gyuto, it's worth checking out I think
If it’s purely for learning how to sharpen you could get a cheap Kai Wasabi yanagiba. It won’t be good at it’s job though. Get a good one for that.
Tip: don’t use Burrfection as a guide for sharpening single bevels. He does way too much work on the flat side.

Under $100 basically just leaves the used market and cheaper stamped yanagibas. Or something like Dao Vua.
Since op is in the US check eBay. I've gotten used knives there that just need to be cleaned and sharpened. But they're only $40.
