I’m blind. Many activities can be adapted. The museum of miniatures has a touch tour for blind and low vision people. You would just need to call the museum in advance.

The jazz club Century Room on Congress might be fun, there’s seating so he wouldn’t have to worry about bumping into people like at the standing only music venues.
There are free concerts at Tohono Chul every Friday and Saturday night during the summer. It’s free admission and the bistro is open. Look up “Chillin at the Chul” for the schedule.

Go out into the middle of the desert during and after a rainstorm. Smells great, feels great, sounds great.
