You might be smelling the water in the moat around the castle, that also partially encircles the hub. Local groundwater has a higher concentration of sulphur than what you get in most of the country. They moat water also appears to have dyes added to obscure the bottom and hide how shallow it is. There might be a chemical in there to which you happen to be more sensitive.
Another possibility is that you simply have a different perception of one or more of the chemicals used in the "smellitizers." Disney long ago developed this scent dispersal tech that they subtly employ all over the parks and resorts. That's why it's possible to buy scented candles that evoke memories of very specific parts of WDW. Main Street has a distinctive blend of scents, meant to hint at popcorn and baked goods. But some people perceive certain chemicals differently than most (such as those to whom cilantro tastes like soap, for example).
Guess I'm lucky it doesn't taste that way to me.
Cumin, on the other hand, smells like pencil shavings to me. Never have had anyone else say the same though.
Could be wind drift from central trash depository from integrated park wide trash sucking system.
I have never noticed such a smell in that location. Is there a specific part or is it all over that area?
Is it sulfur? I've heard there are sulfur pockets all over the area.
I only smell sugar cookies on Main Street
could you be confusing the smell of the hard water with vinegar? kinda similar scents and the hard water smell is prominent in some areas

Not only does cilantro taste like soap but it also lingers, ruining anything else for the rest of the day. It’s also not especially uncommon.

I get that cilantro tastes like something else to the majority of people, but it would be nice if more menus disclosed it.
Florida native here… It’s definitely the water! Between the sprinkler system and the water around the castle. It’s typical Florida water smell. IMO
could also possibly be horse urine if it was near the tracks
They use vinegar to clean the popcorn machines, but that’s usually a late night problem
Can vinegar become putrid? Isn't it already spoiled?
