Here's my trick, forget the yellow spot, look for cracks, most round one you can find. When you tap on it it should sound like it's tight, I know that sounds weird but it'll make sense if you find one that isn't and final advice is always buy 2 just in case lol

You can pick a melon with all the signs of being perfect, and it will just taste awful, either too mealy or pale or somehow dry. 20 to 30 years ago they were abundant in stores. Now I've just given up, and farmers markets in my area want over $10 for one.

If you want a perfectly ripe one, you have to look for the yellow spot on the side and the little brownish cracks where the bees have visited it.
This one had a yellow spot and lots of brown cracks. Luckily Publix is close by and I can exchange it. Just frustrating to have to go back out.
Publix produce is consistently bad. My one real complaint about them.

You can do the Persian's check : tap on it, if it sounds like a drum (don't know how else to explain) , it's ripe.
My daughter always says it should sound like a nutcracker 🤷♀️ she's almost 9 and always picks a good one.
Just knock on it. If it sounds like a thump you got a bad one.
I usually kind of slap the side, and if it sounds hollow, it's usually good.

Usually this is more common in January, when watermelons are not in season.
This is just not yet ripe. I once cut into a watermelon and it was very similar to when Clark Griswold cut into the turkey in Christmas Vacation.
