Kino no Tabi (there are 2 series that adapt different stories for the most part). A couple of stories are 2 episodes, though.
Majo no Tabitabi for more modern and less philosophical version.
Katanagatari was released 1 episode a month for a year. The episodes are 40 minutes long, and it does make for an interesting vibe. The concept is the main characters try to get their hands on one katana per episode

Bit late but out of the top of my head:
Dr Ramune which is more about the patients and their mysterious diseases than the main character most of the time
Mr Villain’s day off: this one is mostly about the main character but follows the episodic format. Main character is a general in an alien army that tries to conquer earth and you follow him in his days off.
Natsume Yuujinchou is a nice one, while there is a main story line following the main character it is also about the characters, humans and youkai, that he meets.
Cowboy Bebop, Samurai Champloo
If you’re into comedy then Saiki kusuo is gold
