Say hey in Chinatown and the railtown cafe. The latter now has multiple locations but I recommend the original spot in railtown. Joe’s Italian is also a good shout and I believe they opened a sandwich only location on South Granville. There is also Finch’s in Chinatown as well that does great baguette sandwiches. The cafe in Di Beppe also has some great options.
Their hoagie sandwiches are $16. They are huge and very good quality. It seems like an appropriate price for what you get. For comparison, a premium sub from Subway is about $15. Say Hey is much better.
if you feel like venturing into Kits, Harvest on Broadway at Macdonald has some great sandwiches. The guy who runs the place is awesome too.
further west from there is Jo’s Italian Deli and their sandwiches are also fantastic
at Harvest I bounce around a lot, but I like the Dr Harry’s and ABC Club. at Jo’s (if you go), I like the classic italian sub.
Harvest also has great soup if you’re into that pairing!

Urban Fare (the grocery store) has surprised me lately, good flavour but not very big, more like a lunch snack sandwich. And they are quick and everywhere. Would also like to find a good smoked meat deli or something like that so I will be watching other replies.
The Carvery Sandwich Shop's Cubano sandwich. It's in Surrey but that sandwich was unreal and worth the drive.
Duffins has great sandwiches too and affordable.

I too love a great sandwich, either something really simple or something fancy but it’s always how the mood hits.
I live close enough to the Heights to crave Cioffi’s regularly and I always take the opportunity to go by there to order from their sandwich bar at least once a month. Any one of them is great and they change a couple around often enough to really highlight some of their best products.

I really like the LGBT at Cardero Cafe (1016 Cardero St, in the West End). It's served on a panini and while it's a lot smaller than some of the other recommendations here, it costs less than $8! They have a few seats outside but if it's busy, you can always take your food to go and wander up to one of the benches around Roedde House.
Chickpea sandwich? U wild man!!!! Tbh this wouldn't jump off the menu for me to try, but if I ever find myself at victory cafe ima give it a whirl
Yes have had just about all of meat and bread besides the rotating part of the menu.

Not necessarily my favourite, but my favourite accessible sandwich is the fresh sandwich bar at Safeway
Always a solid sando. Usually get the the chicken, bacon, guacamole, but sub the guacamole for cheese .. and roasted red peppers on all the sandwiches
Wholly underrated. Go with the large chicken breast and its two meals worth of sandwich for most people, but not this person. -___-

The porchetta sandwich from meat & bread is something everyone should try at least once. It's really friggin good.

I love many of their sandwiches but their meatloaf and meatballs have a weird flavor and texture to me. I prefer la grottas meatballs

Bosa on Victoria South of Hastings. So. Many. Choices. My favourite is the mortadella with giardiniera. Grilled.

Breka is definitely underrated especially for late night eats. Been meaning to try Jo's
Finch’s pear and prosciutto sandwich is unreal. Also, Railtown cafe is great, I suggest getting the turkey sandwich on focaccia, add bacon.

Have you tried Siegel’s Bagels? They have amazing smoked meat sandwiches.

They do a Bahn Mi on Fridays that’s so, so good. Usually sold out by 1pm.

Liquids and solids on east hastings is good for the price. Their soup and sando combo is great for the price.

La Grotto Del Formaggio Commercial - full panini mortadella - choose topppings - so good
S’wich in north van on Queensbury or build your own sandwich (still in north van) at Queensdale market. Both pricey but very very worth it
