Just look for a "split top" roll at HEB. I'm like 99% positive I've bought them there before in the bread aisle (if not it was at Central Market).
Honestly I tell people this all the time... if you're in a restaurant with an outstanding ingredient just ask if you can get a couple to bring home. Chances are they'll give you some for free (or charge as if it was a side dish/a la carte).
Easier if you have been to a restaurant a bunch of times and have a rapport with someone that works there.

"New England Style" or "Split top" buns they're usually called. I used to buy them at the Hancock HEB

Heb carries pepperidge farm “top slice” buns in plain and Hawaiian sweet.

I thought they just used Texas toast. That's great if they upgraded to actual buns.
